But in this case, unexpected does not mean bad. This stuff tastes *good*, it's got a different flavor profile than other chili oils I've tried. It's a little bit more savory, a little less salty than the traditional stuff I've tried., Plus the *spice* kicks in towards the back of the throat rather than right in your mouth. It goes great in just about anything, from rice to chip dips and sauteed vegetables. Overall, I'm really happy with it, it was a pleasant surprise!
Also bonus points because the jar's text is weirdly endearing, you can get a good feel of the company's persona just by reading it. :) I'll be buying again!

But, most importantly, is this chili oil good enough that a Chinese grandma would gladly douse over her food at a hole in the wall Sam Woo restaurant with chipped tiles and teacups as old as the Cold War? To my utter pleasure: also yes.
Sometimes when food gets marketed to the dominant culture, a lot of what makes it great gets lost in translation. It gets toned down or sterilized to the point it’s not even recognizable to the people who’s culture it came from. Even more patronizing, sometimes people try to “elevate” a food as if it wasn’t good enough to begin with. But I’m happy to say this isn’t the case with Fly By Jing chili crisp. It’s elevated, not because its predecessors were inferior, but because they WERE great. This chili oil isn’t trying to do something new, it’s simply saying, “I know why you love chili oil. Let’s try and get this to be the best possible version it can be.” And I think that can only be done by someone connected to the culture who is celebrating a wildly revered condiment.
The flavors of this chili oil are deep and complex. It’s not necessarily the spiciest or has the most intense numbing flavor among chili oils I’ve tried, but there is something deeply unctuous of how all parts of the chili oil are. Some chili oils have a great texture, but the oil itself tastes just like that-oil. This one’s flavor permeated all throughout the jar, even without the added crispy chili bits.
So will this replace my ultimate love, Laoganma? No. But is this going to be the last jar of Fly by Jing Chili Crisp I buy? Definitely not! I’m excited to experiment with this chili oil and see how I can take advantage of the flavor aside as a topping for my dumplings or fried rice, and rather than domination, I’m excited to see how this plays in tandem with my other tried and true chili oil and hot sauce favorites. This chili oil definitely made a devotee out of me.

I put the opened used jar in the fridge to keep it fresher, but one day, when I reached for the jar, the lid felt a bit oily, when I tried to gently open it, it slipped and flew out of my hands and half the contents (worth about $5.50) went all on the front of my favorite shirt and on the floor and freshly painted wall! Luckily, some good stain removal soap removed it from the shirt, and I wiped it off the wall before it could stain. This all happened right before a party we were having, so I cleaned up the floor area before I could take a pic of that also. It reaked of old rancid oil for 2 days after. The biggest complaint of this product is that they did not design the lids well. They are not securely tight fitting in the first place, and if the inner part of the lid gets oily (which is pretty easy), then the lid seems to easily loosen, and could also easily slip out of your hands while opening. Just a warning to people who buy it, be very careful and hold it over your sink when opening. Also, it tasted a bit too salty to us, so a little goes a long way. I plan on giving the second jar to a relative, as we did not really care for the taste enough to keep a 2nd jar of it.
