Sushi rice, a little soy sauce, fresh green onions and dried seaweed and you're ready to go. Only issue is the quantity, 4 jars can be a bit much to eat within the 2 month suggestion for non-natto fanatics. Otherwise, great product and healthy for you! Itadakimasu!
That said, this may have put me off natto forever. The slime texture made me gag and I almost threw up - I enjoy trying new foods and this has never happened to me before. Putting that aside, the bitterness was overpowering. I like black coffee, baking chocolate, and I peel grapefruit like an orange and eat it with the white rind on like its candy. The bitterness of this natto, however, was too strong. I ended up adding avocado, ginger, and maple syrup since nothing else seemed to combat the bitterness, but it also made it more slimy. So then I fried it because the only way I could choke it down was to remove the phlegm texture. Frying it not only probably killed off the nattokinase (which is why I wanted to eat it to begin with) but it also made my apartment smell like old wet gym socks. We had to open the windows and run the air purifier + vents for hours. Fake wasabi and red pepper flakes seem to help choke it down, if only to provide sensory overload so you can't think about the taste and texture. I've heard the flavor is better in brands from Japan and the slime is lessened with bigger soybeans, but I don't think I'll be spending another dime towards natto after already being $54 in the hole dipping my toes with Nyrture. I will say that frying this natto with rice after adding ginger, mustard, scallions, maple syrup, soy sauce, red pepper flakes, and a little fake wasabi, gives it a sort of smoky BBQ flavor that isn't terrible. Still not quite my cup of tea, but I could see /that/ being a taste I could acquire.
This revision is long overdue! I was able to communicate with NYture and came to the conclusion that something may have happened to my product during the cross country shipping. The short of it is that he was incredibly professional and quickly resolved my issue.
I was able to sample more of NYrture natto, but the taste is still not for me. I have tried many types of natto of the frozen variety from Japan and will stick with some of those.
On the flip side, here's what I really appreciate about NYrture: Their mission, customer service, packaging and design.
And on a side note, I was able to find organic natto at one of my local Japanese markets (Mitsuwa). Photo above.

I was quite excited when my order of NYrture natto arrived on my doorstep this morning! I am a natto lover in California and after stumbling upon a few videos on YouTube, I was so excited to see this domestically-made natto.
The main reason I decided to try NYrture's "fresh" natto was the claim that much of the beneficial bacteria dies in the freezing process of natto. As any natto fan knows, 100% of the natto that comes from Japan is frozen. My hope was to get some delicious and significantly more nutritious/healthy natto that is made in the USA.
Admittedly, it took me a while to place an order, since one jar of Nyrture natto is $10. There is also a four jar minimum order and the shipping cost as well. I get it though, as this stuff is as hand made as you can get commercially. Also, it can't be cheap to package, pack and ship across country. I really believe that NYrture's efforts to make natto more widely accepted in the US, as well as other countries, is a labor of love and to be commended for sure.
However, in the end (and much to my dismay) NYrture natto fell short for me.
Flavor-wise, there is a strong bitterness to it, and even though bitter is definitely one of the many flavor components of natto, here it is too overpowering for my taste. Also, I did not experience the enhanced umami that was touted. In fact, to me, there is an absence of umami that I normally get from the many brands of (Japanese-produced) natto (not including the tare/sauce that comes with it) I've tried.
Texture-wise, the consistency of NYture natto is too soft for my preference. I equate the texture to cooked rice when too much water was added, or overcooked pasta. Secondly, there is an unpleasant crunch that I don't like. Not like the crunch from crystals in some aged cheeses, more resembling the crunch when egg shells get in your scrambled eggs.
In the end, and after finishing my first bowl of NYrture natto rice, I realized that I am more on the side of enjoying the taste of natto than reaping all of the health benefits. Sure, it's a big time win-win to have both, but for now I'll stick with my $1.50 three-packs of frozen Japanese made natto.
BTW, I have also tried domestically-made Megumi Natto which is made in California only about an hour north from where I live. I prefer the Megumi brand over NYrture natto yet still not enough to get me away from natto from Japan.
I hope this review did not sound too negative against Nyrture natto. Any natto lover should give it a try and decide for themselves. I hope to see other reviews soon, curious to see what others think.
