For the sauce, I just wanted something quick and I experimented with a seasoned package of McCormicks Zesty spaghetti sauce/ I only partially followed its recipe: Using about 3/4 of the packet, I added about a half cup of water, a drizzle of olive oil and a half cup of milk...then nuked it a little less than 4 mins in a glass bowl. Took it out of the micro and gave it a good stir. I then drained my zucchini in a colander, put it on a plate and added a dash of black pepper, parmeasan cheese and garlic powder to my zoodles. Then I poured the sauce over the top. Folllowed by a little more cheese and VOILA!!!
I steamed my zucchini too long so next time like others have mentioned I'll only 'saute' the zoodles for a few minutes first. It was a little mushy but really yummy tasting.
I'd like to figure out what other kind of veggy I can use or what other kind of recipes there are but for now, I'm going to be eating a lot of zucchini and probably mix with meat, veggies, cheese etc. Mainly, I'm trying to go LOW CARB. Lastly, it really is easy to clean up. Simply rinse it as soon as you are done with it. Then eat your food and when you are ready to clean things up, a little soap and water and if necessary, use a dish brush to get out any clinging zucchini.
The blades are super sharp and shred the vegetables into noodle-like strands easily. I prefer the "thick" setting, although there's not a huge difference between thick and thin.
The only negative I can think of is the cap that's supposed to help you grip the vegetable when the end is too short to hold in your hand. It's totally useless in that capacity. It just shreds the end and doesn't grip it at all. Having said that, it's not a big deal because you can shred a good 90% of the vegetable with your hand. There's not a lot of waste. I suggest keeping this cap over the end you're not using as it catches the "core" pieces that pass through the opening between the cones.
Give it a try...it's a great substitute for pasta and when you put sauce on it, you barely notice the difference. Even the texture is very similar. I've used zucchini and yellow squash with mine with great success.
I recommend sauteing the noodles in a pan with a little bit of olive oil. Boiling them makes them mushy in my opinion. As soon as I shred mine, I salt them raw with garlic salt, saute them in a pan with a little bit of olive oil for 3 minutes, then remove them and put them on a paper towel. They do render liquid as they cook so I prefer to let that soak into the paper towel so the sauce isn't too watery. After that, I heat some sauce in the same pan and re-add the noodles just long enough to warm them. A fast, tasty and healthy lunch.
I use this mainly for cooking squash and zucchini. It works great to bulk out meals and speeds cooking time drastically. It's a quick way to make mock low carb pasta and allows me to both expand my simple meals and get more vegetables into my diet.
Cleaning can be difficult, but is eased drastically by cleaning immediately after use with a bottle brush.
While it has 2 cutting sizes I stick mainly to the thick side as I've found the thin side to clog easily and to be excessively difficult to unclog and clean.
The spiked top is almost completely useless. It tends to shred the vegetables instead of aiding in twisting and what little extra you might be able to get from the very end of your vegetable is just not worth fighting with it.

The one thing I would change would be to make the spacing of the teeth on the smaller side even more close together, as spacing of the blade makes the spirals more flat than square, if that makes sense.
