First things first - lots of questions about this - If you want your knife to be 15° or 20°, that is referring to the angle per side. So if you want to put a 20° blade on your knife, you should sharpen each side to 20° (total of 40°).
These guides are well made. They are helpful for finding the angle you want, but they are not a crutch, they are a tool. Once you find your angle, you need to lock the wrist that is holding your knife to keep the angle through the push/pull. If you attach the guide to your stone with the rubber band, there is some feedback when you push the blade back to the start position and it slides nicely up onto the angle guide again.
HOWEVER, these guides only securely attach with the rubber band across the stone (like a T, 90°). Most professionals suggest having a 45° angle of attack - meaning your blade is not perpendicular to the stone, but at a 45° angle to the long edge of the stone. The rubber band system doesn't let you securely affix the guide to the stone at 45°. This isn't a huge deal, just something to be aware of. As I mentioned, these are a tool to set your angle and build muscle memory. I put the guide at a 45° angle to the corner of the stone, line up my blade with the desired sharpening angle, and push the guide off the stone before sharpening. Remember, use long, steady strokes!
The key is to set your blade on the angle and lock your wrist and then move to the sharpening stone. I was surprised at how consistent I was able to stay with this guide.
I've sharpened my knives for many years on inexpensive pull-through and more expensive 3-step electric sharpeners. The wear on the knives was dramatic and the results kinda meh. When my electric sharpener started scratching my better knives, it was time to try whetstones.
The hardest part of sharpening on a whetstone is finding and keeping the correct bevel angle. The manufacturer's published angles become worthless by the metal removed from both the pull-through and electric sharpeners. I chased those angles for quite a while when I returned to whetstone sharpening after being away for decades.
The wedges helped me easily find my knives' current bevel angles. Mark the edges with a Sharpie, lay a wedge on a whetstone, then scrape the knife lightly 3-4 times on the stone. I then used a magnifying glass or jeweler's loupe to examine the edge. If there's marker on the edge but clean scapes on the bevel it is too shallow an angle. If there's a clean edge but marker on the bevel is too steep an angle. Repeat that process with a few more wedges to find the angle that gives a clean scrap from the start of the bevel to the edge. Note that bevel angle and the knife.
For example, one particular vintage chef's knife I love drove me to almost give up whetstone sharpening. The published bevel angle was 13 degrees. Using the wedges, it tested out at 18 degrees! Five minutes later on a 1000 grit whetstone using the 18-degree wedge as a reference, that knife was razor-sharp, better than I ever remember.
Whether you have $30 invested in whetstones or more than $100, buy yourself a $13 gift to save time on your efforts and wear on your kitchen knives. NOTHING I've PERSONALLY used to sharpen knives over the last few decades comes close to the edge from whetstone sharpening. And, nothing I've done in the last year of whetstone sharpening was as effective and immediate as using the wedges for finding and maintaining the bevel angle while sharpening.

The SETS (because you do indeed receive TWO sets) are BETTER than the listing seems to suggest. EACH SET contains FIVE different angle wedges (and I mean angle wedges as I’m not referring to the adapter thing which permits two wedges to be combined) rather than the four shown in the pic. With these five wedges one can obtain ALL the angles stated. GREAT! The only criticism I could have made would be of the listing which I think undersells the product.
