The cheese is made every day, therefore it has a variability which represents the fruit of nature. You will notice that with age comes perfection characterized by tiny white crystal grains, and this 18 - 24 month specialty has these markings.

Deceiving Picture, RUINED TASTE, i don't raccomand it
I waited home on purpose to receive this hunk of cheese, and as i opened the package, i got so disappointed that i had to come here are write my first really negative review on Amazon.The image shows some nice pieces of Parmigiano Reggiano Cheese properly cracked, but what i received is practically a slice of Parmigiano, probably cut with a saw, the veins have all been broken, taste is ruined, not to mention it is so thin, it is impossible to grate it.In Parmigiano Reggiano cheese it is critically important to NOT CUT the actual cheese, but instead it has to be cracked with proper knives that crack along the veins keeping the taste intact... if when iw as in Italy i cut a piece of Parmigiano Reggiano with a knife in a slice like this, my mother would have slapped me across the face and probably beaten me up with the piece of cheese itself.In here i received what it seems to be a Machine Cut piece of parmigiano that is less than 1" thick... how am i going to grate it tonight on the Risotto i don't have a clue as it is impossible.I definitely do not raccomand this supplier, and the image on the screen has to be fixed to reflect what they are actually selling, because if i had seen it cut this way, i would have never bought it!REASON FOR 2 STARS: the Shipment was prompt and the product arrived perfectly on time... too bad the taste has been murdered by the chainsaw they used to trim this otherwise perfectly good cheese

The same taste of the one I buy when I go in Italy and bring it back. I read a review that complains about the edge of the cheese being too hard! thats the way its suppose to be, and besides I also use the edge, after scrapping it off, I then grate it in my Ninja blender, without throwing away any of it, the softer part of the cheese is good to eat without grating, if one wants. Bottom line its great cheese and I will definitely reorder it.

Having bought many cheeses through Amazon, I'm famiiar with the Italian types available. This one is a total nothing. I tried grating it fine and coarse and ate a chunk - nothing. Added nothing to bowl of pasta other than white stuff.
Something obviously went wrong - i've never had a Parmigiano with no flavor or fragrance of any kind until now. Certainly won't buy again.
Many moons ago I cut the cheese that arrived in big wheels at the grocery store. From mild cheddar to stinky cheese such as Limberger to extra sharp and PM. Every once in a while I sampled some of this and some of that and only bought the really good stuff to take home. PR was one of them and it was good. Early poverty caused that item to drop off our shopping list and did not return until recently. Speed forward for over a half century and they still make most, if not all of those cheeses including PR and today's PR tastes every bit as good as then. This one pound wedge arrived a few days ago and the cheese has made it into spaghetti, baked spaghetti, lasagna among others and every single dish tasted so much better with the real stuff. In some silly manner I am glad I do not have all those wonderful senses that permit a fully detailed comparison of the different regional properties of the different types of PR. It's like art. I buy art because I like the item. Nothing else. The same is true with this PR. I like it, really like it and just as the rest of the family including the dogs. Now what more can you say except pass the cheese.
I did a review on my phone not sure if it went through,If this is a repeat I'm sorry. My chunk of cheese was 8.36 it's not 10ils I realize its may be hard to get 10 lbs on the nose but over is better than at least a 15 dollar short. Not very happy! as this was not cheap for me at all but I took a chance.

I bought this cheese after watching Dr. Eric Berg video on YouTube. Berg indicated that most American made cheese is fake and unhealthy. I will order this cheese on a regular basis. My entire family loves it!
Most reviews are hit or miss, as people don't understand the true methods of cheese storage, and think freezing it is good, but that only prevents further aging. True hard cheese can be stored for years outside of a freezer, hence the age. Because of this, people leave it out or toss it in the fridge unwrapped, only to grow mold or harden up, as it was not properly stored.
Storage tip- wrap it in parchment paper, then in plastic wrap and store it in a crisper drawer in your fridge, and it will survive for months/years.
Outstanding! Delicious! Nothing better for appetizer. And nothing better than ending a lunch or dinner with parmigiano reggiano (the original) and a pear or a sweet apple!
