Authentic Japanese UmeboshiUnripe green plums are pickled and brine infused with red shiso leaves. After being sun-dried they are aged for one year. The simple ingredients are plums, shiso leaf, and sea salt. Japan’s folk remedy for colds and flu is soup of rice and umeboshi. |
Traditional ProductionThe plums are picked unripe in June when most acidic, washed and soaked overnight to remove bitterness. They are put in kegs with red shiso leaf and sea salt. The salt and heavy stones on the lid (pressure) draw juice from the plums which makes pickling brine in which they are kept for a month. Lactic acid bacteria flourishes. Plums are removed from the brine and sun dried for four to seven days, depending on weather. |
Pure Ingredients – No MSG or PreservativesRed shiso imparts perilla-aldehyde and many phytonutrients as well as a brilliant red color. Sun-dried plums are returned to the brine where they soak four or five more days, removed from the brine and placed in kegs to age for at least a year before packaging. Umeboshi contain an array of beneficial organic acids that is bracing and purifying. Shiso Perilla frutescens is a member of the mint family, a small bush of dark red or green heart shaped leaves. Red leaves are called 'beefsteak' leaves. |

I am not a low-salt guy, in fact, I am used to too much sodium, but these things are AWFUL.
I read about this Umeboshi and they talk about people sucking on the stone because the flavor is so good.
Sorry, but there is just about no flavor except salt. Salt flavor with a hint of plum.
I tried using them in small amounts in sushi or in a rice bowl. You have to chop it really fine to get it small enough that one piece doesn't overpower the entire flavor of the sushi or rice bowl. When you do this, the plum flavor is just gone. Undetectable.
I don't think this is the way Umeboshi plums are supposed to taste.
I have had good kimchi, and I ferment my own vegetables, and I love dill pickles and olives and all those things.
This product just tastes like salt.
There are many different kinds some are sweet but this one is the traditional one 😊

They tasted good as well l. Added that sweet fruity plum taste as well as a slightly sour taste. That taste should be there by the way. I made pork and plum spring rolls and these were worth making.
If you are looking for these plums or for a new ingredient to test around with, I recommend these. I will be using these in more recipes.
